Maltodextrin: dangerous or not, and what it's used for
Maltodextrin has a reputation as a suspicious industrial powder, and yet it is one of the few carbohydrates on the market that benefits from genuinely authorized health claims in Europe. Both statements are accurate. Here's what it really is, what it does, the real risks – which exist but are not what you might think – and the labeling trap that fools the most people.
What is maltodextrin?
Maltodextrin is a carbohydrate obtained by partial hydrolysis of starch: long starch chains are cut into shorter chains, made of linked glucose molecules.
The technical, and regulatory, precision: what distinguishes maltodextrin from glucose syrup is its degree of hydrolysis, measured by the dextrose equivalent, or DE. Maltodextrin has a DE less than 20; beyond that, it's called glucose syrup. The lower the DE, the longer the chains remain, and the less sweet the product tastes. This is why maltodextrin has almost no sweet taste even though it is entirely composed of glucose.
The starting starch most often comes from corn, sometimes from wheat, potato, rice, or tapioca. The source changes the potential allergen and the price, not the nature of the product.
One last point, which is important for answering the question of danger: maltodextrin is not an additive. It does not have an E number. It is a food ingredient, just like flour or sugar, and its presence in an ingredient list signals nothing more than a carbohydrate.

What does maltodextrin do, and what can we say about it?
When digested, it is broken down into glucose and absorbed quickly. That's the entire mechanism. It therefore produces a rapid rise in blood sugar, faster than most starches and comparable to that of glucose. This is a drawback at rest and an asset during exercise — which is exactly why it exists in the sports nutrition aisle.
Unlike most ingredients we discuss on these pages, several authorized claims can apply to it, not by its own name but as a carbohydrate with a high glycemic response. The exact wordings are:
- "Carbohydrate and electrolyte solutions contribute to the maintenance of performance during prolonged endurance exercise."
- "Carbohydrate and electrolyte solutions enhance the absorption of water during physical exercise."
- "Carbohydrates contribute to the recovery of normal muscle function (contraction) after highly intensive and/or prolonged physical exercise."
- "Carbohydrates contribute to the maintenance of normal brain function."
These claims are conditional, and the conditions are precise. For the first two, the drink must provide between 80 and 350 kcal per liter from carbohydrates, of which at least 75% are high-glycemic-response carbohydrates, contain 20 to 50 mmol of sodium per liter, and have an osmolality between 200 and 330 mOsm per kilogram. In other words: maltodextrin alone in water does not meet these conditions — sodium is required, hence the importance of electrolytes, a topic we detail in our article on athlete hydration.
For the muscle recovery claim, the condition is an intake of 4 g of carbohydrates per kilogram of body weight, in fractional doses, within four to six hours after exercise. For brain function, 130 g of carbohydrates per day from all sources combined.
These are demanding conditions, and they say something useful: these claims concern long and intense exercise. They do not concern your one-hour strength training session.
Is maltodextrin dangerous?
Neither ANSES nor EFSA has published an opinion designating maltodextrin as dangerous in dietary quantities. It is a carbohydrate, digested like a carbohydrate. The issue is not toxicity; it lies elsewhere — and there are real points to be aware of.
The "sugars" line trap
This is the most useful point in this article, and almost no one writes about it. In European nutritional labeling, regulated by Regulation (EU) 1169/2011, the "of which sugars" line only accounts for mono- and disaccharides: glucose, fructose, sucrose, lactose. Maltodextrin, made of longer chains, is not included there. It is counted in "carbohydrates," not in "sugars."
Concrete consequence: a product can display a very low "sugars" line while being composed mainly of maltodextrin, thus of glucose once digested. This is not fraud; it's the regulation. But if you're monitoring your blood sugar, the line to read is "carbohydrates," not "of which sugars," and the ingredient list tells the rest.
Blood sugar
This is the real safety issue. For a diabetic person or someone monitoring their blood sugar, maltodextrin is treated like glucose, regardless of how sweet it tastes. This does not prohibit it — fast carbohydrates have their place in certain situations, including for diabetics — but it falls within the scope of discussion with the doctor or dietitian managing the treatment, not a decision made at the supermarket.
Digestive discomfort
During exercise, an overly concentrated drink slows gastric emptying and causes heaviness, bloating, and sometimes diarrhea. It is not the maltodextrin that is at fault, but the concentration. This is also the main argument for branched cyclodextrins: for the same amount, their higher molecular weight lowers the osmolality of the drink. Teeth
A fermentable carbohydrate remains a fermentable carbohydrate. A carbohydrate drink sipped over two hours of training exposes tooth enamel much longer than a glass drunk all at once.
What is suspected but not established
Experimental studies, mainly on animal or cellular models, have explored the effects of maltodextrin on the gut microbiota and mucosal barrier. These results exist, they are discussed, and no French or European authority has drawn a conclusion applicable to human consumption. We mention them because they circulate, without giving them a weight they do not have.
The good point, rarely mentioned
Wheat-based maltodextrin is among the exemptions listed in Annex II of Regulation (EU) 1169/2011: it is exempt from the "cereals containing gluten" allergen labeling, as the hydrolysis process eliminates the protein fractions involved. Who should avoid or be wary of it?
- Diabetic or pre-diabetic individuals: not prohibited, but an ingredient to be treated like glucose, and a question to ask your doctor or dietitian.
- Sedentary individuals looking to lose weight: maltodextrin provides calories without satiety and without micronutrients. It has no place in this context.
- Individuals prone to digestive issues during exercise: the concentration of the drink is the first parameter to adjust before changing products.
- Child and adolescent athletes: their carbohydrate needs are easily met with food, and ANSES generally advises against sports supplements for this age group.
- Individuals allergic to corn — a rare case — should check the source, which is not always indicated.
Pregnancy and breastfeeding do not pose any particular problem with a food carbohydrate; it is the complete composition of the product that needs to be checked.
How to read a maltodextrin label?
The source of the starch. Corn, wheat, tapioca, rice, potato: this mention should appear, and its absence is a lack of information rather than a danger. It matters for corn allergy and for those who want to avoid wheat on principle.
The DE, when indicated. Rare on consumer products, common on technical data sheets. A low DE means longer chains, a less sweet taste, and lower osmolality at equal concentration.
Its position in the ingredient list. In a gainer, pre-workout, or bar, maltodextrin often appears at the top of the list, meaning it is the main ingredient. This is not a fault in itself — a gainer is designed to provide carbohydrates — but it should be considered in light of the price per kilogram and the advertised protein content.
The "carbohydrates" line, not the "of which sugars" line. See the paragraph above: this is the only honest reading.
The distinction from similar products. Classic maltodextrin, waxy maize, and branched cyclodextrin are three different carbohydrates, with different molecular weights and osmolalities. They are not mechanically interchangeable and do not cost the same price.
What is added. Sodium, potassium, flavorings, sweeteners. For an exercise drink, the presence of sodium is not a defect: it is one of the conditions for the claims mentioned above.

What should you not expect from it?
It is not a muscle-building product. It provides no amino acids. In this area, proteins do the work.
It is not a "clean" or superior energy source. It's glucose in another form, and for a one-hour gym workout, carbohydrate intake during the session has no proven benefit.
It is not a mass-gaining product on its own. It provides calories, which is useful when struggling to eat enough; but a gainer that relies almost exclusively on it mainly sells you carbohydrates at the price of a supplement. Rice cream or oatmeal often serve the same purpose for less money, with the added benefit of fiber and micronutrients.
And it's not a "chemical" ingredient. It's cut-up starch. The suspicion it inspires comes from its name, not its nature.

When to take maltodextrin?
The meaningful uses concern long and intense effort: during, in the form of a drink combined with sodium, and after, as part of a carbohydrate intake for recovery. Outside of this context, it offers nothing that food doesn't do better.
Can you take it every day?
Nothing prevents it in a healthy person, but the question is why. For an endurance athlete with high volume, daily use is understandable; for someone who trains three times a week, carbohydrates belong on the plate.
